Atoms roam in search of a chemical mate

Love hormone's sobering effect Ruby seadragon: new species discovered Break dance: A carbon-carbon bond breaking, with one molecule crashing into the hydrogen atom of another molecule. Vision supplied by Joel Bowman, Emory University. For almost a century, school text books have taught that chemical reactions involve atoms of the same or different elements rearranging themselves to form new substances. In doing so, the atoms are faced with two options: either they absorb heat or they give it off. This seems straightforward enough and the route atoms take depends on which option requires the least energy. "In this sense, chemical reactions are not unlike human hikers, in that they prefer to take routes involving the least climbing," Scott Kable, the head of chemistry at the University of New South Wales, says. The analogy in the chemistry world is that, in going from reactant to product, molecules hunt for what we call the 'transition state'. What’s in your wine? New study reveals how production methods affect color and taste of pinot noir

Posted: Published on April 13th, 2015

Amsterdam, April 13, 2015 - The taste and color of your wine depends on the methods used to produce it and the chemicals added during production, says research published in Analytical Chemistry Research. The researchers behind the study say wine bottles should carry information about what the manufacturers add during processing - including sugars and acids. In the study, Dr. Heli Sirn and her colleagues from the University of Helsinki, Finland, analyzed the chemical profiles of eight Pinot Noir wines from different regions - the USA, France, New Zealand and Chile. They found that each wine had a different profile, affected by the processes used to make it. "We're interested in winemaking processes and wanted to compare them by looking at high quality wines," said Sirn. "Pinot Noir crops are demanding to harvest - the yield differs depending on the year. All the winemakers that produce Pinot Noir start with the same thing - grapes - and end up with very different products. We wanted to find out what causes those differences." Winemakers add sucrose and other chemicals during manufacturing. By looking at the acids - the organic compounds - in the wine, the researchers could determine which sugars had … Continue reading
